In my last blog post, I wrote about how good food contributes to my happiness. Here I will share two recipes which I tried recently.
Recipe #1: Baked Salmon with a side of Mustard Greens and Sweet Potatoes
Active Time: 15 mins
Total Time: 45 mins
Yield: 2 servings
Baked salmon
Ingredients:
1 lb salmon fillet
3 tbsp Kewpie mayonnaise
1 tbsp lemon juice
1 tsp soy sauce
1 clove minced garlic
Black pepper to taste
Directions:
1) Bake at 500F.
2) Mix the Kewpie mayonnaise, lemon juice, soy sauce, minced garlic, and black pepper in a bowl.
3) Chill sauce in refrigerator for 10 minutes to allow it to firm up.
4) Spread sauce evenly on top of the salmon fillet. Then put in oven.
5) Bake the salmon fillet for about 12 minutes. (Less if you prefer slightly undercooked and moist.) The sauce should be slightly toasted brown when done.
6) Serve with mustard greens and sweet potatoes.
Mustard Greens and Sweet Potatoes
Ingredients:
1 head of mustard greens
3 sweet potatoes
1 tsp vegetable oil
Pinch of salt
Directions:
1) Wash and cut the sweet potatoes into chunks and poke holes in the chunks with a fork.
2) Put the sweet potato chunks into glass container and cover the container. Microwave for 5 minutes.
3) Wash and cut the mustard greens lengthwise.
4) Heat frying pan with a teaspoon of vegetable oil. Then place mustard greens into the heated pan and stir fry until they wilt.
Recipe #2: Salad
Active Time: 10 mins
Total Time: 10 mins
Yield: 2 servings
Ingredients:
6 small pieces of smoked salmon (or use leftover salmon from Recipe #1)
1 head of Romaine lettuce
16 cherry tomatoes
2 oz of arugula
Romano cheese
Half an onion
Dressing:
2.5 oz of Kewpie mayonnaise
1 oz of Maya Kaimal Red Chili Sauce
Directions:
1) Wash and cut the lettuce, onion.
2) Can sliced the cherry tomatoes in half.
3) Mix the lettuce, onion, cherry tomatoes, arugula together. Add the salmon.
4) Pour the dressing over the salad. Shave some Romano cheese on top and enjoy!
